Our Process

Rooted in the Tradition of Jalisco

Contraluz Cristalino Tequila begins its journey in the Highlands of Jalisco, where fully mature agaves—nurtured for 6–7 years—are harvested from our own plantations located in the small town of Jesus Maria. Once harvested, they are slow-cooked in traditional brick masonry ovens for up to three days. This extended roasting process softens the fibers and caramelizes sugars, setting the stage for a full-bodied tequila.

Time-Honored Fermentation, Distillation and Maturation

After cooking, the agaves are crushed using roller mills, extracting the sweet juice that will ferment for 2-3 days in open-air stainless steel vats. Distillation is then done using a mix of copper and stainless steel pot stills, followed by maturation for a minimum of 3 months in American oak barrels. This aging imparts delicate notes of vanilla, caramel and oak.

Tradition Meets Innovation

Upon being aged, Contraluz diverges from the typical Cristalino: instead of relying solely on charcoal filtration to perfect the color and refine the flavors of our spirit, we take a portion of the liquid and redistill it. This third distillation preserves the full expression of the aromatic and flavorful qualities acquired from our raw material - the agave – and our aging process, delivering a complex finish. The remaining liquid undergoes activated carbon filtration to remove the color imparted by the barrel and refine the taste.
