Tradition

In the sun-soaked valleys of Oaxaca, reputable local producers from Valles Centrales harvest fully mature Espadín agaves These agaves are cooked in underground stone ovens, then shredded and left to ferment naturally for up to 10 days. It’s mezcal, made the artisanal way.

The fermented mash is twice-distilled in copper pot stills, yielding a bold, smoky mezcal rich in character. This spirit is then laid to rest in American oak barrels for about six months, soaking up subtle notes of vanilla, honey, and cedar while maintaining the essence of cooked agave and light smoke.

Here’s where Contraluz breaks new ground: the matured mezcal undergoes a meticulous small-batch filtration process using activated charcoal. This removes the color while refining and its elevating its flavor, polishing the spirit into a smooth, crystal-clear liquid—the first Cristalino Mezcal in history.
